    I love the holiday season.  It's a time to celebrate food, glorious food.  Believe it or not, traditional holiday fare used to be healthy wholesome ingredients harvested from local farms.  Unfortunately, our modern holiday meals can be far from their original healthful state.

    Origin of Thanksgiving

    In 1620, a boat filled with over one hundred people who were FED UP with the Church of England, took a journey across the ocean to settle in the New World.  Their original destination was somewhere in Virginia, but they were wildly blown off course and after a grueling sixty-six days at sea they finally landed in Plymouth, Massachusettes.

    They arrived exhausted, hungry and weak, and too late in the year to grow crops. Without proper nourishment to revive and fortify their bodies, forty six Pilgrims died that first winter from disease and starvation.     Back to Basics

    We've all heard that we need to "eat a balanced meal."  But, what exactly is a balanced meal?  According to theUSDA My Pyramid, a balanced meal consists of grains, vegetables, fruits, milk, meat, beans and fats.

    Giving the pyramid a closer look, I entered my height (5'4" on a tall day), weight (128 pounds, mostly) and daily activity level (30-60 minutes).  I was given a personal pyramid that recommended 2000 calories per day.  I don't ever count calories!  I am more concerned about the quality of my food (has to be naturally raised, organic, seasonal, etc.).  2000 calories seemed like a large quantity for my petite frame, so I continued with the Pyramid's menu planner to discover just how many calories I do consume.  I was shocked with the results.  Read more about this at the monthly topic.
